America’s Best chicken salad

I absolutely love chicken salad in sandwiches, wraps or just to eat straight out of the bowl. The unique combination of herbs and fruits in this recipe create the complex flavors and amazing textures that add up to… yes… America’s Best chicken salad recipe!

The key is using a quality rotisserie chicken. I like Costco because they are large, inexpensixe and perfect every time. If you use a smaller one, just hold back some of the dressing so it’s not too wet as the quantities in this recipe are designed for a bigger bird and more meat. The final key ingredient is the mayo. You can make your own or use my favorite – Duke’s

Keep for up to a week in the fridge but believe me, it won’t last that long before it’s gone!

America’s Best Chicken Salad

Ingredients
 

  • 1 whole Rotisserie chicken - deskinned, pulled to bite size
  • 1/2 cup Celery - diced
  • 1/2 cup Red onion - diced
  • 1 medium apple - skinned, cored, diced
  • 1 cup Red seedless grapes - halved
  • 1/2 cup Tarragon, fresh - finely chopped
  • 1/2 cup Parsley, fresh - finely chopped
  • 1/2 whole Lemon zest and juice
  • 1 cup Mayonnaise - Duke's
  • 1/4 cup Sour creme
  • 3 TBSP Dijon mustard
  • 2 tsp Kosher salt
  • 1 TBSP Black pepper - fresh cracked

Instructions

  • Pull cooled, cooked chicken with hands into bite sized pieces.
  • To a large bowl add: all herbs and veggies cut according to instructions. Add lemon immediately after apple so it doesn't brown. Add mayo, sour creme, mustard and seasoning. Mix well.
  • Add chicken and combine well. Adjust salt and/or lemon to taste.
  • Refrigerate at least one hour to allow flavors to meld.
