1wholeRotisserie chicken - deskinned, pulled to bite size
1/2cupCelery - diced
1/2cupRed onion - diced
1mediumapple - skinned, cored, diced
1cupRed seedless grapes - halved
1/2cupTarragon, fresh - finely chopped
1/2cupParsley, fresh - finely chopped
1/2wholeLemon zest and juice
1cupMayonnaise - Duke's
1/4cupSour creme
3TBSPDijon mustard
2tspKosher salt
1TBSPBlack pepper - fresh cracked
Instructions
Pull cooled, cooked chicken with hands into bite sized pieces.
To a large bowl add: all herbs and veggies cut according to instructions. Add lemon immediately after apple so it doesn't brown. Add mayo, sour creme, mustard and seasoning. Mix well.
Add chicken and combine well. Adjust salt and/or lemon to taste.
Refrigerate at least one hour to allow flavors to meld.
