It’s tangy and sweet with a touch of heat. This sauce has real personality but not too much so the meat can shine through. So many sauces are overbearing, especially with sweetness. Especially the store bought stuff – mostly loaded with high fructose corn syrup and other non-natural ingredients. That’s the beauty of making your own sauces – you know what’s in them.
This sauce shines on ribs and pulled pork and makes a great sauce base for any BBQ sauce-based dish such as my BBQ bean recipe.
Ingredients
- 1 cup water
- 6 oz tomato paste
- 1/2 cup Apple cider vinegar
- 1/4 cup Frozen pineapple juice concentrate - thaw
- 1/4 cup Dark brown sugar
- 2 tbsp Molasses
- 2 tbsp Honey
- 1.5 tbsp Liquid hickory smoke
- 1/2 tbsp Kosher salt
- 1 tsp Freshly cracked black pepper
- 1 tsp Onion powder
- 1 tsp Mustard powder
- 1/2 tsp Garlic powder
- 1/2 tsp Celery seed
- 1/2 tsp Curry powder
- 1 tbsp Corn starch - make slurry w/ tbsp water
Instructions
- Heat water and tomato paste over medium heat in medium sized pot and whisk until well combined.
- Add remainder of ingredients and simmer for 25 minutes. Should reduce to a nice sauce consistency.
- Store sealed in Ball jar up to a week in the refrigerator.
