In the dutch oven, over med heat, sautee bacon pieces until 90% to crisp. Add onions and peppers, sautee 3 min. Add rest of ingredients to pot and bring to simmer. Transfer to a 275F oven or a smoker if you have one, for 60-90 minutes.
Notes
There are a few mods to this recipe that can sweeten or spice it up. For a sweeter touch, add 1/2 can of crushed pineapple. To spice it up, add another habanero or a jalapeno. The one part you can't leave out is the Kaffeeschwein rub!If you don't have a dutch oven, it's a great investment. It makes dishes like this a one-pot affair and they go seamlessly from stovetop to oven or smoker. Here's a nice one. If you tend to cook for larger crowds go for the 6 quart version.
